So while I am doing my research for chocolate training, I picked up this book to read. So far it's wonderful. I really like the way Mort Rosenblum tells a story. I highly recommend it.
Most chocolate books have interesting beginnings and opening chapters, but then turn in to recipe books. That's fine if I am looking for a recipe, but for now I want the history of chocolate and the history of some of our well known chocolate companies. Then it's on to techniques and tricks of the trade.
